Sometimes, I’m just tired of being in the kitchen cooking and prepping.  Sometimes it’s just too hot.  Sometimes I just want to sit down with something simple.  Triple Berry Parfait with Homemade Almond Whipped Cream to the rescue! This is a sweet and simple summer treat that’s easy to make and fun for the kids to help with, too!

I love cooking with my kids.  Getting them in the kitchen has so many benefits.  For my little ones, there’s counting, measuring, and letter recognition – not to mention the fine motor skills of scooping, mixing, and – Ethan’s favorite – cracking eggs!  Of course, there’s no eggs here, much to his disappointment, but we do use the mixer for the whipped cream, and that is super fun!

Triple Berry Parfait with Almond Whipped Cream

Ingredients

Triple Berry Parfait

  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup raspberries
  • juice and zest of 1 orange
  • 1 tablespoon sugar
  • Slivered almonds optional

Homemade Almond Whipped Cream

  • 1 cup heavy cream
  • 1/4 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon almond extract

Instructions

Triple Berry Parfaits

  • Combine the berries, orange juice and zest in a bowl and sprinkle with the sugar. Toss gently to coat. Let the berries macerate while you make the whipped cream.

Homemade Almond Whipped Cream

  • Before starting, put your mixer bowl and beaters in the freezer for at least 15 minutes. For the best whipped cream, everything should always be very cold.
  • Add all ingredients in the bowl at the same time. Beat on high until it starts to thicken – taste the whipped cream and add more almond extract if necessary.

Assembling

  • Spoon some of the whipped cream into the bottom of your cups. Add the berry mixture on top. Continue alternating with the berries and whipped cream.
  • Sprinkle with slivered almonds, if desired.

Notes

The whipped cream will hold up in the fridge for 24 hours or so. You can re-whip if it’s too thin.

With all the fresh delicious, and often hand-picked fruit, in our house this time of year, summer is perfect for making a Triple Berry Parfait with Homemade Almond Whipped Cream.  My family isn’t a big fan of nuts, so I leave the almond slivers off theirs, but I love the extra crunch it adds to mine!

Of course, you don’t have to reserve these for summer. It’s a great treat year round! The individual portions make them perfect for parties, Easter brunch and even in your kiddos lunch box!
