I’ve said it a million times, but I love my quick breads – they’re seriously just so tasty and perfect when you have little ones in the house. This is a variation of Mr. Juggling Act’s favorite – Sweet Potato Bread.
Sounds a little odd – tastes amazing.
Whip up a batch of this for your loved ones, and they’ll be asking for it again an again.
Sweet Potato Bread with Orange Glaze
2 cups sweet potato puree
2 cups all-purpose flour
1/2 cup whole wheat flour
1 1/2 cups sugar
1-1/4 cups sugar
2 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2 sticks butter, melted
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon orange zest
Orange Glaze Ingredients:
1 cup powdered sugar
3 tablespoons freshly squeezed orange juice
Zest from 1 orange
Preheat the oven to 350-degrees. Lightly butter and flour two loaf pans. (I love my extra long pans.)
Mix flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl.
In a medium bowl, whisk eggs, cooled melted butter, sour cream, vanilla extract, citrus zest. Stir the sweet potato puree into the egg mixture, then fold into the dry mixture until just combined.
Fold in the sweet potato puree and stir until just combined.
Spread the batter into the prepared pans. Bake until a toothpick comes out lean, about 50-55 minutes. Wait 5 minutes, then turn out onto a wire rack to cool.
While the bread cools, whisk together the powdered sugar, orange zest and juice. The mixture should be fairly thick. If it’s too thin, add a bit more powdered sugar. After the bread has cooled completely, pour on the glaze. Let the glaze set about 2 hours (if you can wait that long!)
